摘要
对我国传统烟熏鱼加工中的烟熏汁进行Ames微生物系统(沙门氏菌/微粒体)的致突变检测,试验结果表明,烟熏汁中有致突变物存在。据此,对烟熏鱼加工制作提出四点改进建议。
Smoking dripping of Chinese traditional smoking fish processing was submitted to mutagenicity test with salmonella typhimur ium TA98,TA100 strains by the Ames salmonel la/m ammalian microsomal.The study results showed that some mutagens existed smoking dripping.And four propositions were suggested to smoking fish processing
