摘要
为全面了解我国主要高粱品种的理化性质,对我国高粱主产区的20个优质高粱品种的物理参数和化学组分进行测定,并对单宁酸含量、直链淀粉含量等营养成分及其加工适应性进行分析。结果表明:湖南高粱、贵州仁怀高粱、湖北阳新两糯高粱均为糯高粱,其理化性质不同于非糯高粱,直链淀粉未检出,总淀粉含量较低,粗脂肪含量较高,千粒重和外观尺寸较小。辽宁朝阳辽杂12高粱和辽宁葫芦岛辽杂19高粱为白高粱,它们的单宁酸含量未检出,蛋白质含量高于所有的红高粱,是一种非常好的健康食品资源。
In order to completely understand the physicochemical properties of main sorghum varieties in our country, the physical property and chemical composition of 20 high quality sorghum varieties in our main producing area were determined, and the nutrients such as tannin and amylase contents as well as their processing adaptability were analyzed. The results showed that the sorghums in Hunan, Guizhou Renhuai and Hubei Yangxin were all glutinous sorghums. Their physicochemical properties were different from non - glutinous sorghums. No amylase was detected, the erode starch content was relatively low and the crude oil content was relatively high, and the thousand grain weight and exterior size were relatively small. Liaoning Chaoyang Liaoza No. 12 sorghum and Liaoning Huludao Liaoza No. 19 were white sorghums, and no tannin in them was detected. Their crude protein contents were higher than those of all red sorghums. They were very good resource for producing healthy foods.
