摘要
利用超微粉碎技术将梭子蟹壳酶解余料加工成蟹壳微粉,并对其粉体性质和营养成分进行分析。试验表明,梭子蟹壳微粉平均粒径21.65μm,休止角53.16°,溶解度10.46%,蛋白质的溶出率37.69%;蛋白质含量为29.4%,脂肪0.12%,灰分60.7%,具有高蛋白、低脂肪、无机质丰富的特点;蟹壳微粉中钙含量为326mg/g,磷176mg/g,铁24mg/g,其中钙磷比为1.85:1;氨基酸总量为14.72%,其中8种必需氨基酸含量6.63%,占氨基酸总量的45.05%。
The enzymatic-hydrolysis waste of swimming crab shell was made into crab shell micro-powder by uhrafine technology, then study on its powder properties and nutrient content. The result showed that average granularity was 21.65 μm, angle of repose 53.16°, dissolved solubility 10.46 %, dissolving out rate of protein 37.69 %;The content of protein in the crab shell micro-powder was 29.4 %,fat 0.12 %,ash 60.7 %. Therefore,the crab shell micro-powder had the characteristics of higher protein, lower fat and abundant minerals; the content of Ca was 326 mg/g, P 176 mg/g and Fe 24 mg/g, the ratio of Ca and P was 1.85:1; the total content of amino acid was 14.72 %, 8 essential amino acids was 6.63 %, which accounted for 45.05 % in the total amino acid.
