油脂加工过程存在一些不安全因素,如溶剂残留,胶质存在引起的油脂色泽加深和氧化稳定性降低,高温脱臭产生的反式酸,辅料的加入带来的重金属污染等等。通过分析这些因素产生的原因,采取控制操作条件、改进工艺设备可以使其达到安全食用标准。
Some factors affecting edible oil safety in oils processing, such as residual solvent, trans fatty acid, mucilaginous impurities, and heavy metal and so on, were analyzed. The mucilaginous impurities can cause the color deepening and oxidative stability reduction. The high - temperature deodorization can produce trans fatty acid, and the addition of additives can bring the heavy metal into the oils. In practice, the edible oils safety could be ensured by controlling the operation conditions and improving the technology and equipment.
