摘要
用生化分析方法测定了2龄18尾异育淇鲫的含肉率及其肌肉营养成分.结果表明:异育淇鲫的含肉率为67.06%,肌肉含蛋白质18.08%,脂肪0.95%,水分79.49%,灰分1.16%,无氮浸出物0.42%.18种氨基酸总量为17.89%,其中8种必需氨基酸量为7.10%,4种呈味氨基酸量为7.08%.必需氨基酸指数(EAAI)为85.20,限制性氨基酸为胱氨酸和蛋氨酸.异育淇鲫肌肉中包含有11类脂肪酸,不饱和脂肪酸含量远大于饱和脂肪酸含量,分别为64.79%和35.21%.
Measurements have been made on the ratio of flesh content and analysis of the nutritive composition of muscle in allogynogenetic Qihe crucian carp which is endemic fish living in the Oixian county. It shows that the ratio of flesh content was 67.06 %. Analysis results of the nutritive composition (%, wet) are that: the moisture of muscle is 79.49%, protein 18.08%, fat 0.95%, ash 1.16%, nonnitrogen extract 0.42%. It was found that 18 common amino acids and 8 essential amino acids for human needs in muscle. The total content of amino acids is 17.89 % (wet) ; the content of essential amino acids is 7. 10% . the percentage of essential amino acids in total amino acids is 40.10% ; essential amino acids to noessential amino acids is 0.68. By nutrition evaluating for the amino acids in muscle to human needs, the content of 4 kinds tasty amino acids is 39, 57 in total amino acids; according to the amino acids score(AAS) and chemical score (CS), the first limited amino acid is cystine and methionine; the essential amino acids index (EAAI) is 85.20. The result shows that in the 11 kinds of fatty acids (FA), the percentages of the unsaturated fatty acids is significantly different to the saturated fatty acids, 64.79 % and 35.21% respectively.
