摘要
天然食用色素由于具备低毒安全、色泽鲜艳等特点,备受人们青睐。但是,由于其自身的不稳定性给应用带来了诸多不便,笔者通过对影响色变因素的研究分析和论证,提出了相应的防护措施,为天然食用色素的合理应用提供了依据。
Peoples very like natural food pigment, because its toxicity is very low and it is in gay colours. But its use is not convenient, because it is not stable. By analysing the elements that affect discolouration of natural food pigment, according to condition, we have advanced some protection measures and provided some foundations for rational use of natural food pigment.
