摘要
酶法和化学法相结合制备的豆渣膳食纤维溶液分别经过40 MPa和瞬时高压140 MPa处理,采用B rookfield DVⅢ+流变仪对溶液的各项流变性质指标进行全面测定,采用幂率模型和宾汉模型对试验数据进行拟和,并采用外推法计算料液的动态屈服力,就试验结果进行详细的分析和讨论。各项测定程序依次为速度敏感性、触变性、时间敏感性、温度敏感性和动态屈服力测定。结果表明:经过瞬时高压(IHP)处理后的膳食纤维溶液具有更高的流变模型拟和度和更高的屈服力。
Soybean dregs dietary fiber was obtained by enzyme method and chemical method, 安 processed by two kinds of homogenizer and the treatment pressure were 40 MPa and 140 MPa respectively, Meanwhile, all the samples'rheological properties were determitted by Broolfield DV Ⅲ + Rheometer. The Power law and Bingham model were used to fit the IHP-worked samples respectively. And the dynamic yield stress was obtained by extrapolation. Experiment results were analyzed by the tests of Controlled Rate Ramp, Up-Down Rate Ramp, Time sensitivity , Tempera ture sensitivity and Dynamic Yield in this research, The IHP sample had higher CoF to the math model, and higher dynamic yield stress elther.
