摘要
着重介绍了热处理在果蔬保鲜上的应用,总结了近年来国内外对果蔬采后热处理的研究进展,阐述了果蔬热处理的保鲜机理。
The application of heat-treatment to fresh-keeping of fruits and vegetables is primarily introduced. Research advances in heat treatment study on post-harvest fruits and vegetables are summarized in recent years. The mechanism of heat treatment to keep greenness of fruits and vegetables is elucidated.
