摘要
以麦胚蛋白为原料,AIcaIaSe碱性蛋白酶为水解酶,采用四元二次旋转组合设计优化水解条件,用邻苯三酚自氧化法测定水解所得麦胚肽的抗氧化活性。结果表明,制备麦胚抗氧化肽的最佳酶解条件为:温度61.15℃,时间3.05h,酶解pH7.75,[E][/S]=6.78%,该条件下制备的麦胚抗氧化肽对O2-.有很强的清除作用,清除率为72.87%。
By using wheat germ protein as substrate, AlcalaSe alkaline protease as hydrolysis enzyme, orthogonal quadratic regression rotation combinatorial design as optimize hydrolysis condition, antioxidant activity of wheat peptide produced by hydrolysis was studied by method of Pyrogallic acid own oxidation. Results showed that the optimum hydrolytic condition for producing Wheat germ antioxidant peptide was 61.15℃, 3.05 h, pH 7.75, [E]/[S]=6.78%. Under this condition, produced wheat germ peptide had strong scavenging activities to O2^- and the scavenging rate was 72.87%.
