摘要
定量描述草菇的失水特性。试验在红外线辐射条件下进行,研究草菇干燥过程中含水率和干燥速率的变化规律。试验表明:草菇在红外辐射干燥过程中不存在恒速干燥阶段,随着干燥介质温度升高草菇含水率下降较快而干燥速率低。初步确定草菇红外线辐射干燥合理工艺。
The test study the dehydrating properties of straw mushroom, which show how the moisture content and dehy- drating rates of the straw mushroom vary with the infrared-drying time respectively, have been acquired for the purpose of describing quantitatively dehydrating properties of straw mushroom. Results show that the constant drying rate does not appear in the infrared-ray drying. But dehydrating rate varies tempestuously with the temperature. The higher temperature the lower drying rate,
