摘要
动物水产自溶,一方面使产品结构改变并使微生物腐败加重,会给生产造成极大损失,另一方面也会改善一些产品的质构,使一些难以利用或低值的物质转变为高价值产品。因此,许多人研究了不同技术在调控动物水产自溶中的应用。分别从物理方法、化学方法、天然酶活性调节物应用和超高压技术4个方面介绍了的研究进展,并分析了动物水产自溶调控研究的发展趋势。
Autolysis make that flesh of aquatic products become soft, and when it happens spoilage of fish turning faster for microorganism's increment, resulting in lots of loss in production on one hand. The action could improve texture of some food, and turn some materials difficult in using or with low value into high value products on the other hand. It has been carried out that lot of research on regulating autolysis of fish by adoption to various technologies. This review focused on the current re-search situation of regulation of fish autolysis by application of physical, chemical method, native modulator and high pressure processing. The analysis on development tendency of research on how to regulate fishery products was also included.
