摘要
测定了玫瑰茄红色素的理化性质,并提出了提取工艺.为玫瑰茄红色素的提取和应用提供科学依据.
The extraction of red pigment from rose-hip and its physico-chemical properties were reported, which provides scientific basis for the extraction and appication of the red pigment. Factors influencing the stability of red pigment are discussed.
