摘要
采用符合工业化生产需要的膜除菌设备对茶饮料进行生产应用研究。应用结果表明,膜除菌设备可以实现茶饮料工业化生产的商业无菌,对茶多酚有一定的截留作用,但对氨基酸、咖啡碱的影响较小,对茶饮料风味品质影响不大,能最大限度保持茶饮料原有色香味品质。
The equipment of membrane-sterilization was used in the research of tea drinks to meet the requirement of industrialized production. The results showed that the commercial asepsis of tea drinks could be achieved with the equipment in industrialized production. Some tea polypbenols were lost, but the influence on amino acids and caffeine was weak. The flavour characteristics of tea drinks could be maintained by retaining most quality components in them.
