摘要
从白酒厂采集来的酒糟等相关材料中,经过一系列的分离纯化得到的相关酵母菌株作为出发种,对出发种进行不同剂量的紫外线诱变处理后,用pH3的选择培养基作为筛选条件,分离,选育适合白酒厂生产工艺条件要求的酒用耐酸酵母菌株。
UV mutagenesis was performed on yeast thalli which was gained by separating and sublimating from materials collected from wine-factories' lees,By disposal with different dosage of ultraviolet radiation, the mutants named saccharmoyces of tolerance to low pH values which adapt to the technics of distilled spirit were cultivated and selected on materials medium ofpH3 values.
