介绍了表面活性剂的特性及乳化增溶原理,通过在低度白酒中应用,最适HLB值=10~12,以复合乳化剂为最佳,不仅酒液透明,且微量成分无损失,风格突出,低而不淡。
The principles of the emulsifying and dissolving properties of surface active agent were introduced.Compared with other methods of removing impurities from low alcohol liquors,the utilization of surface active agents had better results.Not only do the flavor compounds in the liquors remain intact,but also the primary style had maitained,the liquors are more clear.
