A Study on the Stone Cells of Pear Fruits

摘要 采用3种方法分离、定量梨果实石细胞,结果表明冷冻法是理想的石细胞定量方法,能较完整地分离梨果肉、果心、果皮的石细胞。不同品种梨果实的石细胞体积含量不同,鸭梨果肉石细胞含量少、颗粒小,肉质细;砂梨系统的品种和酥梨果肉石细胞含量较高、颗粒较大,肉质粗,同一品种梨果实的不同部位(果肉、果心、果皮等)石细胞含量也不一致。果肉石细胞总量与果皮石细胞含量呈显著正相关(r=0.9084),大于0.50 mm含量与果肉粗细关系密切,本文还探讨了梨石细胞的成因与果实品质的关系。 To compare three ways for separeting stone cells from pear fruits, the freezing treatment was a useful method. With the freezing treatment, it was analysed the contents and distributions of stone cells in pear fruits. The contents of stone cells in various pear varieties were different. The content of stone cell in Yali flesh was less and the size of stone cell was small, and the flesh was fine. In the varieties of Sand pear system and Suli, the content of stone cell was more and size was large, and the flesh were rough. In the pear fruits, the stone cells was the highest in peel, the second in the kernel, then in apex and base of flesh, the lowest in the middle of the flesh. The contents of stone cells in pear peel was signficantly possitive correlation with that in the flesh (r=0.9084*). The content of stone cell in size larger than 0.50 mm was hith correlation with the texture of pear flesh. Finally, the problems such as the origin and evolution of stone cells in pear and the relationship between stone cells and the quality of the pear fruits were also briefly discussed.
