摘要
选用木瓜蛋白酶进行正交试验研究蜂王幼虫酶水解工艺条件,调查水解温度、时间、加酶量、pH值和固液比5个因素对酶水解的影响,并确定出最优水解条件为温度50℃,时间3h,加酶量0.5%,pH为6.5,料水比为1∶3。
To study enzymatic hydrolysis conditions in honeybee, papain was used to study the effects of temperature, time, enzyme amount, pH value and solid-liquid ratio on hydrolysis with orthogonal experiment. The results showed that the optimal conditions is temperature 50 ℃, 3 h, pH 6.5, enzyme amount 2.4%, solid-liquid ratio 1：3.
