摘要
用胰蛋白酶和中性蛋白酶复合水解鹿骨胶,考察pH值、酶水解温度、酶用量(E S/)、底物浓度对水解的影响。结果表明,鹿骨胶酶水解的最佳工艺条件为:酶解温度50℃p,H值为7.5,鹿骨胶浓度20%,酶用量8%,酶解时间8h。(孙悟)
Deer bone glue was hydrolyzed by trypsin and neutral protease to investigate the effects ofpH value, enzymatic hydrolysis temperature, the ratio of enzyme to substrate （E/S） and substrate concentration on hydrolysis.The results suggested the best technical conditions for hydrolysis： enzymatic hydrolysis temperature at 50 ℃, pH value as 7.5, deer bone glue concentration as 20 %, 8 % enzyme use level, and 8 h enzymolysis time.
