摘要
黑大麦新品种,系(利马黑大麦×舟麦2号)杂交育成,中高杆,茎杆粗壮,抗倒伏,属二棱大麦,早熟,长芒大穗,大粒型,千粒重44~50g(南昌,甘肃)。成熟后期穗、颖、芒和籽粒转为黑色。是研制黑啤酒和开发系列营养保健品、饮品的特种资源。对黑大麦新品种籽粒主要营养成份及氨基酸组份测试结果表明,黑大麦籽粒中“三高”(蛋白质、纤维、维生素)营养含量比普通大麦含量高,其中蛋白质11.17%,提高2.85%;纤维6.63%,提高13.18%;核黄素2.44mg/kg,提高34.07%。主要矿物元素中,以Ca含量高(701.4%mg/kg)比普通大麦提高9.42%,比玉米含量高2.5~3倍。对17种水解蛋白氨基酸测试结果,黑大麦具有14种氨基酸含量明显比普通大麦高2~10个百分点。其中赖氨酸含量0.4999%,提高7.9%;含硫氨基酸平均提高10.4%以上,羟基类提高8%以上等等。因此,黑大麦营养价值比普通大麦还好,可开发珍珠米、麦片、面包、糖浆、大麦咖啡等饮料和婴儿食品,亦可用作防治糖尿病、高血压及肝病等食疗佳品。
A new variety of black barley was bred from the cross of lima black barley /zhou mai NO. 2. It is a tow -rowed, strong - strawed, long - awned, large-spiked and early - ripened variety with TWG 44~50g. This variety has higher tolerance to disease and stronger resistance to lodging. Thc results of grain quality determination showed that that the content of protein, fiber and riboflavin were reapectively 11. 7 %, 6. 63 % and 2. 44mg/kg, an increase by 2. 85 %, 13. 18 % and 34. 07 % respectively over that of ordinary barley. The content of calcium was 9. 49 % higher than that of ordinary barley and 2. 5 ~3 times as high as corn. According to dectation , the seeds contained 17 amino acids. The content of 14 amino acids increased by 2 %~10 % respectively, lysine 0. 4999 %, increased by 7. 9 %, Sulphureous amino acids increased by 10. 4% and hydroxyl amino acids increased by 8% etc as compared with these of ordinary barley, thus superior to ordinary barley in nutrition value . This black barley is a special material of black beer and health protection nutrition, Suitable to develop pearl rice, Oatmeal, bread, syrup. barley coffee and baby food. It also can be used to made new preducts which can prevent and cure diabetes. high blood preasure and liver diseases.
