摘要
高粱颖片富含天然色素高粱红，色泽鲜艳，使用安全。采用有机溶剂提取，对条件要求较高，成本较大。本文建立了一种简便、低成本和高得率（８．４％）的稀碱溶液提取方法。所得色素热稳定性和光稳定性好，着色性强，是一种理想的天然色素。
The Kaoliang(Chinese sorgham)glume is full of natural Kaoliang red pigment,which is of some nutritive value and highly safe for humans.It has been extracted by dilute solution of alcohol and alkalinity.But this method is costly and hard to handle.A new technology of extraction is developed it is simple,convenient,and less costly,with a higher extraction rate(8.4%)and convenient for industrial production.The Kaoliang red pigment extracted by this technical process is stable for heat and light.It has been proved that the Kaoliang red pigment is a very good natural pigment.
