摘要 壳聚糖酶作为一种专一性降解壳聚糖的水解酶,具有强大的生理功能和生产应用价值。本文结合目前的最新资料, 对壳聚糖酶的分类、功能及其应用现状进行了综述。 Chitosanase, capable of hydrolyzingβ-1,4 glycosyl bond specifically, has mighty function and application value. The classification, function and application of chitosanase are summarized briefly based on current information.
