摘要
对以甘薯渣为原料,采用药用真菌液态发酵甘薯渣制取膳食纤维的工艺进行了研究,优化了发酵培养基,并在发酵罐水平进行了放大实验。研究结果表明,在摇床水平,采用甘薯渣9%,麸皮0·8%的培养基,发酵4d后发酵液中的膳食纤维含量可达到29·63g/L;而在10L发酵罐中,相同的培养条件下,发酵4d后发酵液中的膳食纤维含量可达到25·81g/L,其中不溶性膳食纤维10·01g/L,可溶性膳食纤维15·80g/L。采用优化条件,膳食纤维产量得到较大提高,并且改善了膳食纤维中可溶膳食纤维与不溶膳食纤维的比例。
This research was mainly on the technic of producing dietary fiber in submerged fermentation with sweet potato residue and officinal fungi, The substrate has been optimized, and the extend culture was processed in fermentation reactor, The result showed that the content of dietary fiber 29.63g/L was obtained after 4 days fer mentaiton in the condition of culture with sweet potato residue 9% and bran 0.8% when the research was done in the beaker flask and the content of dietary fiber 25.81 g/L,which contains SDF 15.80 g/L and IDF 10.01 g/L, was obtained after 4 days fermentation in the same condition when the research was done in the 10L-ermentor.
