摘要
对真空冷却原理和系统做了简要介绍,分析了真空冷却技术存在的优缺点,论述了国内外真空冷却技术的研究进展,举例介绍其在食品工业的应用情况,最后指出了真空冷却技术的研究趋势。
The mechanism and system of vacuum cooling are briefly introduced in this paper. And here we analyse the characteristics of vacuum cooling technology. We also describe the research advances and the applications of this technology in food industry. And the tendency of vacuum cooling research in the future is finally pointed out. [
