摘要
果蔬预冷是冷藏链中一个重要环节,快速及时地预冷能保证果蔬的质量。为此,通过对龙眼预冷温变特性的分析,建立了集总参数法模型来估算龙眼的温度变化特性,并通过试验进行了验证。结果表明,估算数据和实验数据的相关系数月:0.8955~0.9861,为非常高度相关。集总参数法能够很好地估算龙眼预冷时间,为开发预冷设施及实现预冷过程的自动控制提供基础数据和理论依据。
The pre-cooling of fruits and vegetables is the important step in the cold-chain. It can promise the quality of the fruit to pre-cool quickly and in time. The lumped parameter method was built up estimating the temperature variety characteristic of the Longan's pre-cooling, and was confirmed by the experiment. The test results showed the related coefficient R of the estimate data and the experiment data is 0.8955-0.9861, which is very highly related. The lumped parameter method can adapt to estimating the pre-cooling time of Longan, which provides the foundation data and the theoretical basis for design of forced-air pre-cooling system.
