摘要
对七种水分活性的菜油样品,在40℃温度下,进行八周储藏试验,结果表明:水分活性对油脂的自动氧化和酸败具有二重效应,过高或过低的水分活性都具有促进油脂氧化作用,当AW值在0.65~0.75的临界范围时,水分活性对油脂的自动氧化有抑制作用,对储藏稳定性有良好的保持作用。因此,如把水分活性作为菜油储藏管理的一项指标,是很有意义的。
The rapeseed oil of seven different Aw was stored at 40℃ for 8 weeks. The test results showed that effects ot Aw on the autoxidation and acidification of rapeseed oil. In the range of 0.65~0.75 Aw, it is beneficial to retard autoxidation and to keep storage stability. Levels of high or low Aw, however may accelerate oxidation of rapeseed oil. This shows. Aw is a very important factor of stored rapeseed oil.
