摘要
本文综述了麦芽糊精的定义、组成、生产的特点及在食品中的应用现状 ,并对其作为多糖类食品添加剂在我国的发展前景进行了分析。
This paper gave a report about the definition、composition、characteristic of product and current situation of application of malt dextrin in food industry. It also gave some analysis for development prospects of malt dextrin as polysaccharides food additive in China.
