摘要
对长白山地区四种山野菜的粗蛋白、粗脂肪、膳食纤维、灰分、胡萝卜素、氨基酸、维生素及微量元素等营养成分进行了分析。结果表明,四种山野菜营养丰富,各种营养成分较为齐全,为增加人们膳食营养、改变餐桌食品花样、开发山野菜及其食用价值提供科学依据和参考。
The contents of the crude protein, crude fat, dietary fibre, ash, mineral, carrotene, vitamins and amino acids in four kinds of wild vegetable-sonchus brachyotus DC, allium macrostomon bunge, portulaca oleracea L. and com-melina communis L. were analysed in this paper. The results showed that the four kinds of wild vegetables contained richly and more complete nutrients. It could provide scientific basis and reference for improving nutrition of the people's dietary, changing the variety of mensal foods, developing wild vegetables and increasing its eating value.
