摘要
目的测定4种野菜中的粗纤维和矿物质的含量,为消费者选择食用野生菜提供理论依据。方法取小根蒜、荠菜、柳蒿和蒲公英的可食用部位作为实验样品,用中性洗涤剂法测定野菜中粗纤维含量,用原子吸收分光光度计法测定野菜中钙、铁和锌含量。结果每100 g样品中,柳蒿、荠菜、蒲公英、小根蒜中分别含粗纤维9.67、8.30、7.50、2.45 g,钙693.36、251.87、212.00、111.11 mg,铁2.37、3.09、3.71、2.78 mg,锌0.41、0.27、0.16、0.06 mg。结论柳蒿中粗纤维含量最高,小根蒜粗纤维含量最低;蒲公英中的钙和铁的含量最高,而柳蒿中的锌含量最高。
Objective The contents of crude fiber and minerals in four kinds of potherbs was determined and provided the theory basis for the selection of edible potherbs.Methods The edible part of Allium macrostem on Bunge,Capsella bursa,daur aimen and Taraxacum mongolicum were selected as the samples.The crude fiber was detected by the means of neutral detergent and the contents of calcium,iron,and zinc by atomic absorption spectrophotometer.Results There were 9.67 g crude fibre,2.37 mg calcium,3.20 mg iron and 0.41 mg zinc in 100 g of daur aimen.There were 8.30 g crude fiber,251.87 mg calcium,3.09 mg iron;and 0.27 mg zinc in 100 g of Capsella bursa.There were 7.50 g crude fibre;212.00 mg calcium;3.71 mg iron;0.16 mg zinc in 100 g of Taraxacum mongolicum.There were 2.45 g crude fiber;111.11 mg calcium;2.78 mg iron and 0.06 mg zinc in 100 g of Allium macrostem on Bunge.Conclusion The content of crude fibre and zinc are highest in daur aimen and lowest crude fibre in Allium macrostem on Bunge,and the highest content of calcium and iron are in Taraxacum mongolicum.
