摘要
测定了翘嘴红鮊肌肉的近似营养组成和7种矿物元素、18种氨基酸含量。结果表明:翘嘴红?肌肉中水分、粗蛋白、粗脂肪、粗灰分含量分别为80.30%、16.70%、2.48%和1.08%;钙、磷、镁、铁、铜、锌、锰的含量分别为346.5～429.1mg/kg、1812～2010mg/kg、16.5～18.5mg/kg、69.2～78.0mg/kg、1.1～1.3mg/kg、45.5～54.1mg/kg、1.8～3.5mg/kg;肌肉干物质中18种氨基酸总量为82.25%,其中鱼类所需的10种必需氨基酸总和为39.18%。
Analysis was conducted to determine the proximate composition,levels of eight minerals and 18 amino acids in the dorsal flesh of Erythroculter ilishaeformis.The results showed that the moisture,crude protein,crude lipid and crude ash were 80.30 %,16.70 %,2.48 % and 1.08 % of flesh weight respectively;levels of calcium,phosphorus,magnesium,iron,copper,zinc and manganese in flesh were 346.5-429.1 mg/kg,1812-2010 mg/kg,16.5-18.5 mg/kg,69.2-78.0 mg/kg,1.1-1.3 mg/kg,45.5-54.1 mg/kg and 1.8-3.5 mg/kg respectively;the total amount of 18 amino acids in flesh was 82.25 % of dry matter,including 10 essential amino acids for fish accounting for 39.18 % of dry matter.
