摘要
自 2 0世纪 6 0年代 ,人们陆续从热带植物中发现了 6种甜蛋白 (嗦吗甜、莫奈林、马槟榔、Brazzein、Pentadin、Curculin)和一种变味蛋白 (Miraculin) ,它们具有的高甜度或变味特性引起了人们的极大兴趣。本论文对这类蛋白的性质、氨基酸序列、结构作一介绍 。
Since 1960s,six sweet proteins(thaumatin,monellin,mabinlin,brazzein,pentadin,curculin) and one taste_modifying protein(miraculin)have gradually been found from tropical plants,and their intense sweetness or taste_modifying ability has got great concerns.Here their properties,amino acid sequences,structures are reviewed,and the mechanisms of sweet_tasting,taste_modifying and the prospect are also discussed.
