摘要
微波技术在食品加工中的应用前景虽然令人鼓舞,然而,对微波加工中存在的问题和特殊效果如果认识模糊,就可能使微波技术的应用走弯路。例如:加热不均的问题、低温杀菌的问题、微波辐射安全的问题等。本文主要就这些普遍引起人们注视的问题提出自己的见解。
The application prospect of microwave in food processing is inspiring. But detours may inhibit the application if the problems and special effects in microwave application don't be known clearly, for example, heating not well-distributed, low-temperature sterilization and microwave radiation safety, etc. Some new ideas have been put forward on these problems which are interesting to people.
