辐射保藏食品就是利用电离辐射辐照各种食品进行杀虫、灭菌和抑制某些生理活动来延长谷物、豆类、干鲜果品、蔬菜、肉类以及水产品等的贮存期。与传统贮藏方法相比,具有效果好,卫生安全,加工程序简便,实用性广,易于生产规模化的特点,经济效益和社会效益高,具有广阔的应用前景。
