摘要
为获取制备酶水解磷脂的最佳条件 ,以浓缩磷脂为底物 ,磷脂酶A2 为水解酶 ,采用静止反应方式 ,进行了大豆磷脂酶水解改性研究。最佳反应条件为 :磷脂酶A2 0 .14 % ,氯化钙 0 .0 3% ,时间 7h ,温度 70℃。在最佳条件下 ,FFA的生成量可以达到 2 2 .3mL ,转化率可达到 36 .36 %。FFA的生成量与溶血磷脂的生成量有显著的相关与回归关系 (P <0 .0 1) ,回归方程为 :Y =0 .15 2X +13.6 77。
To attain the optimal technological conditions of enzymic by drolysis of soybean phospholipid,the concentrated soybean phospholipid was selected as substrate, the phospholipase A 2 as the hydrolysis tool enzyme,and the enzyme-modified phospholipid was studied by the means of quiescence reaction.The optimal condition is enzyme dosage 0 14%(W%), CaCl 2 0.03%(W%), 7 h of hydrolysis, temperature 70℃. In this condition the amount of free fatty acid (FFA) is over 22.3 mL, the transformation efficiency can be up to 36.36%. The amount of the free fatty acid (FFA) produced has the significance with lysophospholipid (P<0.01),the equation of regression is:Y=0.152X+13.677.
