摘要
对酶解法脱除大豆混合油中磷脂的工艺进行了研究,并对影响该工艺的主要因素进行了单因素试验,同时对各主要因素对综合影响进行了正交优化,得出了主要影响因素在该工艺中的最佳操作条件,即酶解4 h、水化1.25 h、预热温度为70℃、酶用量0.35 g/750 mL混合油。在此条件下,混合油经过该工艺的磷脂脱除率达到98.2%。
The technology of removing phospholipids in the soybean miscella by enzymatic hydrolysis was studied. Some main effect factors were discussed by single factor experiments, and these main factors were optimized by orthogonal experiment. The result shows that the optimal conditions are as follows : time of enzymatic hydrolysis 4 h , hydration time 1.25 h,wanning-up temperature 70 ℃ , enzyme dosage 0.35 g/750 mL soybean miscella. The ratio of removing phospholipids in the soybean miscella is 98.2% under the optimal conditions.
