摘要
以草莓为试材,采用以改性壳聚糖为主剂的涂膜保鲜剂进行涂膜保鲜试验,结果表明:采用5~10倍的壳聚糖稀释液处理草莓,在0℃条件下,保鲜30天,商品率仍达85%,失重率不足1%,并保持草莓原有风味。
The effect of chitosan coating preservative on straw berry stored at low temperature(0℃)was studied in this paper.Results showed tha t strawberry coated by chitosan(diluted5~10times)had the best quality after30da ys storage.The flavor of strawberry was normal and rate of rotting and loss was low15%and1%separately.
