乌龙茶"岩韵"与"音韵"的感官体验及化学特性 被引量:18

摘要 为探讨乌龙茶特殊"岩韵"与"音韵"的感官特征与物质特性,对8个有代表性的闽北与闽南乌龙茶进行感官审评,并对与味感相关的主要内含成分进行常规与高效液相色谱法(HPLC)测定.结果表明,闽北武夷岩茶茶多酚、儿茶素总量、咖啡碱及酚/氨值较高,其岩韵韵浓而凝重;闽南铁观音茶游离氨基酸含量、酯型儿茶素占儿茶素总量之比较高,其音韵韵厚而幽长. This paper is an attempt to probe into the relation between sense experience of special Yanyun and Yinyun and its chemical compounds in Oolong tea by organolepitic evaluation, general measure and HPLC analysis of eight typical samples including four kinds of North Fujian Oolong tea and four South Fujian Oolong tea. Results show that tea polyphenols, total content of catechins, caffeine and the ratio of polyphenols to amino acids in North Fujian Wuyiyan tea are higher than those in South Fujian Tie guanyin tea,which results in strong and heavy Yanyun; amino acids and the ratio of total gallate type catechins to total content of catechins in South Fujian Tieguanyin tea are higher than those in North Fujian Wuyiyan tea, which results in thick and lasting Yinyun.
