摘要
根据茶树种质资源开发与利用现状,对品质上具有一定优异性的 19 个茶树品种的春茶 1 芽 2 叶固定样进行了水浸出物、茶多酚、氨基酸、咖啡碱、儿茶素分析,为茶叶加工与茶叶深加工筛选茶树优异品种资源,并为茶树优异资源的育种工作提供数据参考.结果表明,白毫早,37-2,福安大白具有高水浸出物(>45%)特性;碧香早,37-2,福安大白茶具有高茶多酚(>34%)特性;苹云具有高氨基酸(>4.5%)特性;白毫早,福安大白茶,水仙 84-1 具有高表没食子儿茶素没食子酸酯(>7%)特性;水仙 84-1 具有高咖啡碱(>4%)特性.
According to the present conditions of tea excellent resources in China,by analysing the contents of water extracts,tea ployphenols,amino acids,caffeine and tea catechins in the one bud and two leaves of nineteen breeds in Spring that some character are super ,this paper is an attempt is to screen the tea excellent resource for the traditional or comprehensive tea processing and provide the data for breeding of tea excellent resource.The results show that Baihaozao,37-2 and Fu’andabai have the character of high content of water extracts (>45%);Bixiangzao,37-2 and Fu’andabai have the character of high content of tea polyphenols(>34%);Pingyun has the character of high content of amino acids(>4.5%);Baihaozao,Fu’andabai and Shuixian 84-1 have the character of high content epigallate catechin gallate(>7%);Shuixian 84-1 has the character of high content of caffeine (>4%).
