不同培养料对杏鲍菇子实体蛋白质营养的影响 被引量:12

摘要 研究了不同培养料对杏鲍菇子实体蛋白质营养价值的影响。结果表明,棉籽壳培养料栽培的杏鲍菇子实体蛋白质的化学评分、氨基酸评分、氨基酸比值系数分和营养指数分别为53.2,68.6,58.3和17.4,均居3种培养料栽培杏鲍菇子实体蛋白质的第1位,必需氨基酸指数为88.5和生物价84.6。这些结果证实,棉籽壳培养料栽培的杏鲍菇子实体蛋白质具有较高营养价值,值得推广应用。 Edible mushroom, Pleurotus eryngii, was grown on three different composts as substrate to compare their effect on the nutrient value of the protein in the fruit body. Cotton seed hull was shown to be the best of the three composts studied. The chemical score, amino acid score, amino acid ratio coefficient and nutritional index of the protein in the fruit body of the mushroom were 53.2, 68.6, 58.3 and 17.4, respectively. Its essential amino acid index was 88.5 and its biological value was 84.6. Cotton seed hull is, therefore, recommended to be used as the main component of the medium for Pleurotus eryngii cultivation.
