摘要
对长根菇蛋白质的营养价值进行了研究 ,结果表明 :长根菇子实体中化学评分、氨基酸评分、必需氨基酸指数、生物价、营养指数和氨基酸比值系数分分别为 86.1、1 0 1 .4、85 .1、81 .1、2 1 .5、87.3 ,均居 3种参比食用菌的第 1位 ,这些表明长根菇是一种具有开发前景的菇。
The results of the study on the nutrient-value of protein in Oudemansiella radicate showed that the values of chemistry, amino acids, necessary amino acids, biology and nutrient and the ratio of amino acids were 86.1、101.4、85.1、81.1、21.5、87.3 respectively. These values ranked the first in the three foot-officinal fungi which were evaluated. These results showed that Oudemansiella radicate has a broad prospect for exploitation.
