摘要
应用壳聚糖进行龙眼澄清的单因素试验研究。结果表明,壳聚糖使用的最小剂量为0.04g/L,最适pH值为3.0~4.0,最适温度为40~60℃;采用此工艺流程澄清的龙眼果汁,透光率可达96%以上,且营养成分损失极小。
The single factor of longan juice clarification by chitosan was studied.The results showed that the minimun dosage of chitosan was0.04g /L,pH3.5~4.0at40~60℃.The light transmittance was over96%and its nutrition have not been destroyed.
