摘要
多糖是一类重要的保健食品功能因子,广泛存在于我们日常食用的果蔬当中。本文介绍了果蔬多糖的研究概况、分离纯化、结构分析和保健功能,并展望了多糖的应用前景。
Polysaccharide,a very important health factor in foods,consists exten sively in edible fruit and veg-etable.In this paper,the research s ituation,isolation and purificati on,structural analysis,health eff ects,and applied prospect of fruit and vegeta ble polysaccharide were briefly dis cussed.
