不同品系五龙鹅胸肌脂肪酸含量动态变化规律

Dynamic Changes of Fatty Acid Composition in Breast Muscles of Wulong Geese Across Different Strains

摘要 【目的】本研究旨在揭示品系和周龄对五龙鹅胸肌脂肪酸含量动态变化规律的影响,为肉鹅胸肌品质性状选育提供理论参考。【方法】选取同批次五龙鹅M1与M3系各30只(公母各半),分别于6、8、10周龄从每个品系中随机挑选公母各3只屠宰,采集右侧胸大肌样品,利用气相色谱法测定其脂肪酸组成。【结果】在6与8周龄时,M1系五龙鹅胸肌重和胸肌率显著高于M3系(P<0.05),而10周龄时无显著差异(P>0.05);两品系胸肌均检出17种脂肪酸,其中C16∶0、C18∶0、C18∶1n-9c、C18∶2n-6c和C20∶4n-6含量最高,合计占比超过总脂肪酸的90%。品系间主要脂肪酸沉积规律总体趋势相同,从6到8周龄,两品系胸肌C18∶0、C20∶4n-6及饱和脂肪酸(SFA)含量均显著降低(P<0.05),而C18∶1n-9c、C18∶2n-6c及单不饱和脂肪酸(MUFA)含量均显著上升(P<0.05),但8~10周龄时,五龙鹅胸肌上述脂肪酸含量均无显著变化(P>0.05)。Pearson相关性分析显示,胸肌C16∶0、C16∶1、C18∶1n-9c等脂肪酸含量间呈显著负相关(P<0.05);而C18∶0、C20∶4n-6、C22∶1n-9、C22∶6n-3等脂肪酸含量间呈显著正相关(P<0.05)。【结论】五龙鹅M1和M3系在胸肌发育速度和脂肪酸沉积方面均存在发育阶段性差异,8周龄是五龙鹅胸肌发育和脂肪酸沉积的关键转折点,可作为鹅胸肌品质性状评价的时间节点。 【Objective】This study aimed to investigate the effects of strain and age on the dynamic changes in fatty acid content in the breast muscle of Wulong geese,so as to provide a theoretical basis for improvement of the quality traits of goose breast muscle.【Method】Thirty geese(half male and half female)were selected from M1 and M3 strains of Wulong goose,all hatched in the same batch.At 6,8,and 10 weeks of age,three males and three females were randomly selected from each strain and slaughtered.Samples from the right pectoralis major muscle were collected.The fatty acid composition of each sample was determined using gas chromatography.【Result】At both 6 and 8 weeks of age,breast muscle weight and breast muscle percentage were significantly higher in M1 line than in M3 line(P<0.05),while no significant difference was observed at 10 weeks of age(P>0.05).A total of 17 kinds of fatty acids were detected in the breast muscle of both lines,with C16∶0,C18∶0,C18∶1n-9c,C18∶2n-6c,and C20∶4n-6 being the most abundant,collectively accounting for over 90%of the total fatty acids.The overall patterns of fatty acid deposition were generally consistent between the two lines.From 6 to 8 weeks of age,C18∶0,C20∶4n-6,and SFA contents were decreased significantly(P<0.05),while C18∶1n-9c,C18∶2n-6c,and MUFA contents were increased significantly(P<0.05)in both lines.However,no significant changes were observed in the aforementioned fatty acids from 8 to 10 weeks of age(P>0.05).Pearson correlation analysis revealed that there were significantly negative correlations among C16∶0,C16∶1,and C18∶1n-9c fatty acids contents(P<0.05),whereas significantly positive correlations were observed among C18∶0,C20∶4n-6,C22∶1n-9,and C22∶6n-3 fatty acids contents(P<0.05).【Conclusion】Developmental stage-specific differences were observed in growth and fatty acid deposition of breast muscle between M1 and M3 strains of Wulong geese.Eight weeks of age was identified as a critical turning point for pectoral muscle development and fatty acid composition,which might be served as a reference time point for assessing breast muscle quality traits in geese.
