摘要
牦牛在高原地区的产业发展中占据重要地位,随着人们对生活品质的要求逐步提高,牦牛肉产业的绿色发展显得更为重要。该文主要从牦牛的品种、分布及养殖现状、牦牛产业发展存在的问题、牦牛深加工产品品质提升的技术研究、牦牛肉现有的加工工艺等方面进行了阐述,并在此基础上进一步探讨了牦牛深加工产业的现状及未来的发展趋势,以期为牦牛养殖者、加工企业和科研同行等相关人员提供参考。
Yak plays an important role in the industrial development of the plateau area.With the gradual improvement of people's requirements for the quality of life,the green development of yak meat industry is more important.This paper mainly from the yak varieties,distribution and breeding present situation,the problems existing in the development of yak industry,the existing yak processing product quality improvement technology research,on the basis of the yak meat processing technology,further discusses the present situation and the development trend of the future,in order to yak breeders,processing enterprises and scientific research and other related personnel to provide reference.
