高效脉冲强光对稻谷中真菌杀菌工艺的研究

摘要 曲霉菌属和镰刀菌属等真菌污染会影响稻谷储藏时间及品质。为评估脉冲强光杀菌对稻谷中曲霉菌和镰刀菌的灭活效果,本文研究了不同脉冲时间(50、100、150、200、250 s)、不同脉冲距离(8、11、14、17、20 cm)和不同脉冲能量(100、200、300、400、500 J)对稻谷中真菌的影响,并且测定了脉冲处理前后稻谷水分含量、电导率、直链淀粉含量和脂肪酸值等的变化。根据响应面优化结果最终确定在脉冲时间200 s、脉冲距离11 cm、脉冲能量400 J条件下,灭菌率可达96.8%,优化后的脉冲强光杀菌工艺能够显著提高稻谷中真菌的致死率,同时脉冲后稻谷水质量分数为12.87%,多酚氧化酶含量下降0.83 U/g(P<0.05),电导率数值上升4.57μS/cm(P<0.05),脂肪酸值、直链淀粉、丙二醛和可溶性蛋白含量影响不显著。 Fungal contamination by Aspergillus spp.and Fusarium spp.can affect the storage stability and quality of rice grains.To evaluate the inactivation efficacy of pulsed light(PL)sterilization against these fungi in rice,the effects of different pulse durations(50,100,150,200,and 250 s),pulse distances(8,11,14,17,and 20 cm),and pulse energies(100,200,300,400,and 500 J)on fungi in rice were investigated,and changes in moisture content,electrical conductivity,amylose content,and fatty acid value of rice were determined before and after PL treatment.Based on response surface optimization results,the optimal sterilization parameters were identified as a pulse time of 200 s,pulse distance of 11 cm,and pulse energy of 400 J,under which the fungal inactivation rate reached 96.8%.This optimized PL sterilization process significantly improved the fungal lethality in rice grains.Under these conditions,the moisture content of rice grains decreased to 12.87%,polyphenol oxidase activity was significantly reduced by 0.83 U/g(P<0.05),and electrical conductivity increased by 4.57μS/cm(P<0.05).No significant changes were observed in fatty acid value,amylose content,malondialdehyde levels,or soluble protein content,indicating that PL treatment effectively inactivates fungi while preserving the intrinsic quality of rice grains.
