我国禽肉生产链中弯曲菌污染状况分析及风险评估研究进展

摘要 弯曲菌是一种重要的食源性致病菌,而禽肉是该菌重要的污染对象。文章对近年来我国禽肉生产链中的弯曲菌污染率进行meta分析,并综述了禽肉中弯曲菌的国内外风险评估研究进展。通过检索文献数据库,得到2000—2021年的相关报道,并根据排除标准进行筛选,开展数据收集及Meta分析工作。研究涵盖77篇文章,涉及22个省、自治区、直辖市,共计40 395份样品。分析发现,我国禽肉生产链中弯曲菌的合并污染率为31%(95%CI:26%~36%),零售环节禽肉中弯曲菌的合并污染率为30%(95%CI:26%~36%)。弯曲菌污染主要集中在东部及沿海地区;禽肉中鸡肉、鸭肉、鹅肉的污染率依次降低;从养殖到零售环节,污染率上升;工厂屠宰及加工等环节是弯曲菌污染的重要场所。我国禽肉中弯曲菌的污染率较高,相关风险评估研究较少,需要进一步完善风险评估研究体系,提高禽肉食品安全。 Campylobacter spp.is an important foodborne pathogen,and poultry meat is the primary food source.We conducted a meta-analysis of Campylobacter contamination in poultry meat in China in recent years,moreover,risk assessment studies on Campylobacter in poultry meat both domestically and internationally were summarized.To analyze the contamination status,we systematically searched and selected the literature in databases.A total of 40395 samples were extracted from 77 publications conducted in 22 provincial regions.The pooled contamination rate of Campylobacter in the poultry meat production chain from 2000 to 2021 in China was 31%(95%CI:26%-36%),and Campylobacter was detected in 30%(95%CI:26%-36%)retail poultry meat.The Campylobacter contamination mainly occurred in the eastern and coastal areas of China.The contamination rates of chicken,duck,and goose meat decreased in turn.The prevalence of Campylobacter increased in the chain from farm to retail,and slaughtering and processing were the main places where Campylobacter contamination occurs.The contamination of Campylobacter in poultry meat production chain in China is relatively severe,and studies on risk assessment are scarce.It is necessary to further improve the risk assessment research system and improve the food safety of poultry meat.
