摘要
为客观分析牛至精油保鲜研究的演进趋势,应用文献计量学知识、Origin和VOSviewer软件对牛至精油保鲜相关研究进行可视化图谱分析。结果表明,1995—2025年牛至精油保鲜研究的发文量呈上升趋势;美国是发文量最多的国家;《食品与发酵工业》、Foods和Journal of Food Science是发文量最多的中/英文期刊;Friedman Mendel是发文最多的学者;希腊约阿尼纳大学(Univ Ioannina)是发文最多的研究机构;研究机构与研究者之间宜加强合作;该领域的研究热点是牛至精油抗微生物与抗氧化、保鲜物质基础与保鲜应用研究;未来的研究重点仍是牛至精油保鲜机理与应用研究。上述结果揭示了牛至精油保鲜研究现状、研究热点与演进趋势,可为后续牛至精油保鲜研究提供参考。
In order to objectively analyze the evolution trend of oregano essential oil preservation,bibliometric knowledge,Origin and VOSviewer software were used to visualize the research related to oregano essential oil preservation.The results showed that the number of publications on oregano essential oil preservation was on the rise from 1995 to 2025.The United States is the country with the largest number of posts;FoodandFermentationIndustries,Foods,JournalofFood Scienceare the Chinese/English journals with the largest number of articles.Friedman Mendel is the most published scholar;Univ Ioannina is the most published research institution;cooperation between research institutions and researchers should be strengthened;the research hotspots in this field are the antimicrobial and antioxidant research of oregano essential oil,the basis of fresh-keeping materials and the application of fresh-keeping materials.Future research focuses on the preservation mechanism and application of oregano essential oil.The above results reveal the current status,research hotspots and evolution trends of oregano essential oil preservation,which can provide a reference for subsequent research on oregano essential oil preservation.
