摘要
以茶多酚、葡萄籽多酚为芯材,壳聚糖为壁材,采用包埋法制备茶多酚和葡萄籽多酚微胶囊。以包埋率为指标,在单因素试验的基础上通过响应面优化制备工艺。结果表明,茶多酚、葡萄籽多酚微胶囊的最佳制备工艺为芯材与壁材质量比1∶5、包埋温度45℃、包埋时间47 min。在此条件下茶多酚和葡萄籽多酚微胶囊的包埋率为97.03%±0.52%。通过电镜扫描图片可以发现,微胶囊形状规则,结构紧凑,说明微胶囊成型效果良好。通过红外光谱图分析得知,壳聚糖包埋茶多酚、葡萄籽多酚效果良好,微胶囊包埋率高。
Tea polyphenols and grape seed polyphenols were used as the core materials and chitosan as the wall materials,and tea polyphenols and grape seed polyphenols microcapsules were prepared by embedding method.Taking the embedding rate as the index,the preparation process was optimized by the response surface on the basis of single factor experiments.The results showed that the optimal preparation process of tea polyphenols and grape seed polyphenols microcapsules was as follows:the mass ratio of core material to wall material was 1∶5,the embedding temperature was 45°C,and the embedding time was 47 min.Under these conditions,the embedding rates of tea polyphenols and grape seed polyphenols microcapsules were 97.03%±0.52%.Through the electron microscope scanning pictures,it could be found that the shape of the microcapsules was regular and the structure was compact,indicating that the microcapsules had a good molding effect.Through infrared spectrogram analysis,it was found that chitosan embedded tea polyphenols and grape seed polyphenols had good effects and high microcapsule embedding rate.
