富硒酵母的功能及其在动物生产中应用的研究进展 被引量:10

Research progress on function of selenium-enriched yeast and its application in animal breeding

摘要 与无机硒相比,有机硒和纳米硒具有毒性小、生物活性高、抗氧化性强等优点。酿酒酵母为主的益生菌酵母可以用作烘焙、酿酒、饲料添加剂等。利用酵母和硒元素所开发的富硒酵母可作为动物的营养强化剂,具有较高的利用率,能够解决动物缺硒的问题,还可以提高动物的免疫功能。因此,富硒酵母是目前较为理想的硒源,可作为替抗产品在动物生产中应用。文章综述了富硒酵母的优势、种类、功能及其在动物生产中应用的研究进展,有望进一步解决动物因缺硒而引发的疾病问题。 Compared with inorganic selenium,organic selenium and nano-selenium have the advantages of low toxicity,high biological activity and strong antioxidant activity.Probiotic yeast based on Saccharomyces cerevisiae can be used as baking,brewing,feed additives and so on.Selenium rich yeast developed by using yeast and selenium can be used as nutritional fortifier for animals,which has a high utilization rate,can solve the problem of selenium deficiency in animals and improve the immune function of animals.Therefore,selenium-rich yeast is an ideal source of selenium at present,and can be used as a substitute product in animal production.In the paper,the advantages,species,function and application of selenium-rich yeast in animal production are reviewed,which is expected to further solve the disease problem caused by selenium deficiency in animals.
