摘要
人体必需的微量元素里有硒,对健康有着不可忽视的重要生理功能体现,富硒食品凭借提升免疫、抵抗氧化、防治病症的功效而广受瞩目,跟传统富硒手段比起来,依靠微生物做富硒生物转化,因它安全系数较高、效率颇高且易于驾驭,逐渐跻身研究热点行列,本文对富硒微生物于食品生产领域的应用情况作了综述,主要探讨富硒微生物生物转化机制以及生物活性相关研究进展,力求为富硒食品的开发应用提供理论上的参考。
Selenium is an essential trace element in the human body,which has an important physiological function that cannot be ignored for health.Selenium rich foods have attracted widespread attention for their ability to enhance immunity,resist oxidation,and prevent and treat diseases.Compared with traditional selenium rich methods,relying on microorganisms for selenium rich biotransformation has gradually become a research hotspot due to its high safety factor,high efficiency,and ease of control.This article reviews the application of selenium rich microorganisms in the field of food production,mainly exploring the mechanism of selenium rich microbial biotransformation and related research progress on biological activity,aiming to provide theoretical reference for the development and application of selenium rich foods.
