摘要
硒与人体健康息息相关,富硒酵母是有机硒的一员,有着高生物利用率、高安全性、易扩大生产等优点,因而被广泛应用到食品、医药、饲料等行业。富硒酵母是通过具有富硒性能的酵母菌株经发酵培养基富硒培养后所制得,通常通过生物量、硒含量、有机硒比重等指标考察其富硒性能。目前,通过诱变育种的方法对酵母菌株进行处理,可以有效提高其富硒性能。本文主要对物理诱变、化学诱变、复合诱变选育富硒酵母菌株的情况,以及其富硒发酵培养基成分和发酵培养条件的优化情况进行阐述,并对富硒酵母在食品行业中的应用情况进行讨论。本文旨在为诱变育种选育富硒酵母菌株的研究及其工业化应用提供依据。
Selenium is essential for human health.Selenium-enriched yeast,an organic form of selenium,offers high bioavailability,safety,and scalable production.Consequently,it's widely used in food,medicine,and feed industries.Selenium-enriched yeast is produced through fermentation of yeast strains with selenium-enriching capabilities in selenium-containing media,and its enrichment performance was generally evaluated by biomass,selenium content,and the proportion of organic selenium.Currently,mutagenic breeding methods have been employed to treat yeast strains effectively to enhance their selenium-enriching capabilities.This review summarized the mutagenic breeding approaches—including physical mutagenesis,chemical mutagenesis,and compound mutagenesis—applied to select selenium-enriched yeast strains,as well as the optimization of fermentation media composition and fermentation conditions for selenium enrichment.The application of selenium-enriched yeast in the food industry was also discussed.This review aimed to provide a foundation for further research and industrial applications of selenium-enriched yeast strains by mutagenic breeding.
